Air Fried Cornmeal Fritters are delicious, crispy and moist. The texture is similar to frying but without the excess cooking oil. This is definitely a much healthier method of enjoying our traditional cornmeal fritters. The Spanish term for cornmeal fritters can be either surullitos or sorullitos.
Sorullitos are cornmeal fritters that are shaped like a cigar. Edam or Gouda cheese is usually incorporated into the cornmeal batter. However, you can also prepare them without cheese. The sorullitos are a very popular appetizer in Puerto Rico and are usually served with Mayo Ketchup as a dipping sauce.
I will be demonstrating how to air fry both freshly made sorullitos and frozen sorullitos, using the Ninja Foodie Deluxe Cooker. Make sure you read the User Manual in its entirety before operating your unit.

Preheating the Ninja Air Fryer!
Before we can preheat the air fryer, attach the diffuser to bottom of cook and crisp basket before placing inside the pot.
Insert cook and crisp basket inside the pot and close the crisping lid.
Turn on the power and select the air crisp program. Set the temperature to 360°F. Set the time to 5 minutes. Press the Start/Stop button to begin.
The unit will display “DONE” when completing the preheating or air frying process. We just finished preheating the air fryer for 5 minutes.
Coating the Freshly Made Sorullitos with Olive Oil!
Place the freshly made sorullitos on a cutting board lined with wax paper.
Lightly spray with olive oil on both sides, which is my preference. However, you can use other oils that are allowed for your air fryer.
NOTE: This is a spray bottle that is filled with olive oil.
Air Frying the Freshly Made Cornmeal Fritters (Sorullitos)!
Firstly, place as many cornmeal fritters the basket will hold and close the lid.
Secondly, reprogram the settings for air frying. Set the temperature to 365°F. Set the time to 14 minutes. Press the Start/Stop button to begin.
NOTE: I plan to check the cornmeal fritters after 7 minutes of air frying.
Thirdly, open the lid after 7 minutes of air frying to check on the cornmeal fritters.
Fourthly, since they are air frying nicely, let’s turn them over to the other side to crisp.
Finally, close the lid and the air fryer will resume automatically until the air frying is complete.
After 14 minutes of air frying, the sorullitos are done with a crispy golden crust. Remove from basket and place on a plate. Turn off the power.
Coating the Frozen Sorullitos with Olive Oil!
Place the frozen sorullitos on a cutting board lined with wax paper.
NOTE: Furthermore, I normally prepare the sorullitos in advance and freeze them for future use.
Coat the frozen cornmeal fritters lightly with olive oil on both sides.
NOTE: You can also use “PAM” cooking spray with olive oil.
Air Frying the Frozen Cornmeal Fritters (Sorullitos)!
Once the cornmeal fritters are coated with olive oil, place them in the basket and close the crisping lid.
NOTE: It is not necessary to preheat the air fryer if you are going to air fry the second batch immediately.
Reprogram the settings for air frying. Set the temperature to 365°F. However, change the time to 16 minutes. Press the Start/Stop button to begin.
NOTE: I plan to check the cornmeal fritters after 8 minutes of air frying.
After 8 minutes of air frying, let’s open the lid to check on the cornmeal fritters.
Lastly, turn the sorullitos to the other side to crisp and close lid.
NOTE: Once you close the lid, the unit will continue air frying until it is complete.
The sorullitos are finally done with a crispy golden crust after 16 minutes of air frying. Remove from basket and place on a plate. Turn off the power.
Air Fried Cornmeal Fritters!
The Air Fried Cornmeal Fritters (Sorullitos) have a crispy outer crust with a soft and moist cheesy flavor inside. We also love to dip the cornmeal fritter into the Mayo Ketchup sauce. We, of course, will enjoy even more these delicious appetizers when served with a cup of Puerto Rican coffee.

Ingredients
- Ninja Foodie Deluxe Cooker
- 16 Cornmeal Fritters (Sorullitos) – 8 freshly made and 8 frozen
- Pam Cooking Spray with Olive Oil
Instructions
- Preheat Air Fryer if necessary. Follow instructions in User’s Manual.
- Coat the cornmeal fritters (frozen or freshly made) with “Pam” cooking spray.
- Insert basket in pot and add the amount of freshly made cornmeal fritters the basket will hold.
- Select air crisp program. Set Temperature to 360F and set time to 14 minutes. Press Start/Stop button to begin Air Frying.
- After 7 minutes of air frying, open crisping lid and turn over the cornmeal fritters to the other side to crisp.
- Close crisping lid to resume air frying.
- Open lid and check the cornmeal fritters for doneness after 14 minutes of air frying. Remove from basket and place on a plate.
- Repeat this process for the frozen cornmeal fritters except increase the air frying time to 16 minutes. Make sure to check the cornmeal fritters after 8 minutes of air frying.
