Description
Coconut Ice Cream is very creamy and usually prepared with homemade coconut milk. The fresh coconut milk will provide intense coconut flavors to the ice cream.
Ingredients
- 1 cup Cream of Coconut
- 3 cups homemade coconut milk or canned coconut milk
- 3/4 cup sugar
- 1/2 teaspoon lite salt
*See below for ice cream machine
Instructions
- In a bowl, add cream of coconut and stir to combine the coconut cream and coconut water.
- Pour 3 cups of homemade coconut milk or canned coconut milk.
- Add 3/4 cup sugar and 1/2 teaspoon lite salt. With a whisk, mix all the ingredients until well blended.
- Cover bowl with lid and refrigerate for 2 hours to chill.
- *Chill the ice cream canister for 2 to 4 hours or overnight. You usually have to chill the canister regardless of which ice cream equipment you will use to prepare the ice cream.
- Place the chilled canister in the machine and pour the chilled coconut ice cream mixture inside canister. Insert the mixing blade and place lid on the canister.
- Fill bucket with a layer of small ice cubes, and then a layer of rock salt. Continue this process of layering the ice and salt until it reaches the drainage hole on the side of the bucket.
- Lock motor into place and start the ice cream maker. Check the ice level every 10 to 15 minutes. Fill with more ice and salt as the ice level decreases.
- After 30 minutes of churning or until the ice cream thickens, unplug the unit and remove the motor from bucket. Clear any salt or ice from lid before removing.
- **Place thickened coconut ice cream into a container and a spread the ice cream on top. Place cling wrap over the container and press down until it touches the entire surface of the ice cream. This is to prevent ice crystals from forming.
- Cover with lid and place in the freezer for 4 hours or overnight.
- Remove cling wrap and scoop out the ice cream and place into a serving dish.
Notes
*I used a 4-Quart Nostalgia Electric Ice Cream Maker, which requires small ice cubes and rock salt to prepare the ice cream. However, you can use a regular ice cream maker machine for this recipe. Make sure you read the user’s manual in its entirety before operating the unit.
**You can serve the ice cream straight from the canister. However, I prefer to freeze the ice cream for a thicker consistency.
If you plan to prepare the homemade coconut milk, then add 30 minutes more to the total time.
