Piña Colada

Description

The Piña Colada is a tropical cocktail that originated in Puerto Rico.   It is a creamy drink with lots of pineapple flavor and with a subtle taste of coconut.

Ingredients

  • 2 fresh pineapples, cut into 1-inch chunks
  • ⅓ cup of water
  • 1 cup cream of coconut
  • ¾ cup white rum or to taste
  • 1 cup crushed ice or ice cubes

Instructions

  1. After cutting the pineapples into chunks, reserve 1½ cups of fresh pineapple chunks.
  2. Add remaining chunks into blender with ⅓ cup of water and beat at high speed until well blended.
  3. Place strainer over bowl lined with cheesecloth.  Pour liquified pineapple chunks through cheesecloth.  Lift cheesecloth and squeeze out the juice with your hands.   Measure 3 cups of pineapple juice.
  4. Pour pineapple juice, cream of coconut, pineapple chunks, white rum and ice cubes into blender and beat at high speed until a creamy texture is formed.
  5. Decorate drinking glass rim with a slice of pineapple and serve immediately.

Notes

Note:  If using canned cream of coconut, stir content to combine the coconut cream and coconut water before measuring 1 cup of cream of coconut.
