Description
Rice with Chicken is a common dish in the Latin culture. This awesome dish has lots of tropical flavors due to our condiments. Most importantly, this popular recipe can be prepared both in a traditional cauldron or pressure cooker with great results.

Ingredients
- 7 to 8 bone in skinless chicken thighs
- 1½ cups of water
- 2 cups long grain white rice
Marinating Ingredients
- 2 garlic cloves, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white vinegar
- ¼ teaspoon cumin
- ½ teaspoon lite salt or to taste
- ¼ teaspoon black pepper
Condiments
- 2 seasoning envelopes with coriander and annatto
- 2 tablespoons tomato sauce
- 3 sprigs fresh cilantro, chopped
- 2 tablespoons sofrito
- 14 pimento-stuffed green olives
- 2 teaspoons capers, drained
- 1 tablespoon extra virgin olive oil
- 2 minced garlic cloves
- ½ teaspoon lite salt or to taste
Instructions
- Add the marinating ingredients in a bowl. Mix until well blended.
- Place chicken thighs in bowl. Pour marinade over the chicken and coat them evenly.
- Cover with lid and place in refrigerator for 4 hours or overnight.
- Select the saute program to Normal Temperature and set the time for 16 minutes. Sear chicken until both sides are lightly browned. I normally sear the chicken thighs in two batches. Remove from inner pot and place on a large plate.
- In a bowl, add the condiments and mix until well blended.
- Select the saute program to Less Temperature and set the time for 5 minutes. Add the condiments to the inner pot and saute for 5 minutes, stirring occasionally.
- Rinse the rice with cold water.
- Pour the water into inner pot with condiments. Stir until well blended.
- Place the chicken thighs at the bottom of pot. Add the rice and submerge rice into liquid, using the tip of tongs. Do not stir the rice.
- Cover Instant Pot with lid and lock in position. Turn Steam Release Handle in Sealing Position and Float Valve should be in the down position.
- Press the Pressure Cook manual button and select High Pressure to cook the rice. Set the time to 6 minutes.
- After cooking under pressure for 6 minutes, the cooker will switch to the Keep Warm function. Let the rice warm for 10 minutes (Keep Warm Mode).
- Press cancel button to turn off pressure cooker.
- Turn steam valve to Venting position. Once the steam has been released, the float valve will be in the down position.
- Remove lid from pressure cooker (Make sure float valve is in the down position).
- Turn the rice and serve warm.
Notes
It is very important that you read your operating manual for Instant Pot before cooking any meal under pressure.
