Description

Spaghetti with Ground Turkey (Espagueti con Carne Molida de Pavo) – A tasty meat sauce prepared with tropical ingredients combined with whole grain thin spaghetti for an excellent healthy meal combination.

Scale

Ingredients

  • 3 tablespoons Extra Virgin Olive Oil
  • ¼ cup chopped green peppers
  • ¼ cup chopped onions
  • 3 minced garlic cloves
  • 3 sprigs chopped cilantro
  • 1 chopped culantro leaf
  • 1 teaspoon Lite salt (or to taste)
  • ½ teaspoon oregano leaves
  • ¼ teaspoon cumin
  • 2 tablespoons sofrito
  • 1 seasoning envelope with coriander and annatto
  • 1 pound ground turkey
  • 3.5 cups pasta sauce (or add the amount that you prefer) prepared with tomato juice, tomato sauce and roasted garlic
  • 5 ounces Whole Grain Thin Spaghetti

Instructions

  1.   In a large skillet, pour olive oil and add chopped green peppers, chopped onions, minced garlic cloves, cilantro and culantro.  Mix and sauté over medium heat for approximately 3 minutes.
  2.  Add salt, oregano, cumin, sofrito and seasoning envelope.  Combine and simmer over medium low heat for 3 to 5 minutes.
  3. Place ground turkey and coat completely with the tropical condiments.   Simmer for at least 3 minutes.
  4.  Stir the meat frequently to obtain a minced or chopped texture by continuing to break up the meat with a spoon.  Once the meat has a minced texture, simmer for 25 minutes, stirring occasionally.
  5.  Pour 3.5 cups of pasta sauce into skillet.  Stir to coat the meat mixture with the sauce.  Simmer for 15 to 20 minutes.
  6.  Boil sufficient water to cover the pasta in a large saucepan and add salt to taste.  Place the pasta into boiling water and stir immediately to prevent from sticking.  Continue boiling for 6 to 8 minutes or until the pasta is tender.
  7.  Drain the water from saucepan into a colander and set aside the pasta.
  8.   Add the cooked pasta into skillet, and coat the pasta completely with the meat sauce.   Simmer for 10 to 15 minutes.
  9.   Lightly sprinkle some parmesan cheese on top before serving.  You can accompany this pasta dish with my homemade breadsticks along with a salad.

Notes

I purchase Classico Roasted Garlic for the pasta sauce, but you purchase the brand of your preference.  To boil the pasta, just use sufficient water to cover the noodles and add salt, according to your taste.
