Avocado Toast

Avocado Toast is one of my favorite meals to prepare for breakfast or afternoon snack.  The bread is crispy and garlicky.  The avocado spread is creamy with a buttery nutty taste.   In addition, I love to garnish with fresh seasoned tomatoes from my garden for a taste of sweetness.   The Avocado Toast has different layers of texture and flavor in one serving.

In our culture, we consume a lot of avocados.  The avocados in Puerto Rico, which are similar to the Florida avocados, are much larger with a smooth bright green skin color even when they become ripe.  They are usually served in slices with your meals.  Because they contain less fat and more water, the texture is not as creamy compared to the Hass avocado.  Therefore,  I will be using the Hass avocado for this recipe.

Food History!

Hass Avocado

The Hass avocado originated in California.  They have a higher fat content and less water, making the texture much creamier.   The outer skin is bumpy with a dark green color.  When they become ripe, the bumpy skin color turns black.   To determine if the avocado is ripe, gently squeeze the avocado, and it should feel soft to the touch.   An unripened avocado is hard like a rock.

Avocados are very healthy whether you consume the Hass, Florida or tropical avocados.   They contain mostly heart-healthy monounsaturated fat and some fiber, carbs and protein.  Furthermore, the avocado is believed to increase your HDL and lower your LDL.

Removing the Avocado Flesh!

Cut the avocado in half.  Use a sharp knife to cut the avocado lengthwise from top to bottom, making sure the knife is touching the inside pit.

Twist both halves and pull apart.  Look how beautiful.

I love to use this kitchen gadget because it will easily remove the pit.

Let’s scoop out the flesh by running a spoon around the inside edge and bottom of avocado.

Lift the flesh to remove.

Place in a bowl big enough to mash. 

Preparing the Avocado Mixture!

Mash the avocado with a potato masher or you can use a fork.  Continue mashing until the avocado is mostly smooth with a slightly chunky texture.

I like to add about 2 to 3 teaspoons of nonfat Greek yogurt to provide extra protein.

Squeeze a small amount of lemon juice from a lemon wedge for flavor and to prevent the avocado from browning.  Add a pinch of sea salt. 

Stir all the ingredients until well blended.   The avocado mixture is ready.  Cover bowl with lid and set aside.

Seasoning the Fresh Tomatoes!

Seasoned Tomato Slices

These are fresh tomatoes from my garden.  They are usually sweet when ripe and will add another layer of texture and sweetness to the avocado toast.  Slice about 2 to 3 small tomatoes.   To season the tomato slices, drizzle extra virgin olive oil on top along with some sea salt and black pepper, according to your taste. 

Toasting and Seasoning the bread for the Avocado Toast!

Toast your bread in a toaster, toaster oven or regular oven.  I usually use Whole Grain or Whole Wheat for a healthier version, but you can use the bread of your preference.  The bread should be crisp and golden brown.   I cut this fresh garlic clove from my garden in half.

While the bread is still warm, rub the cut side of garlic across the top surface or you can use garlic paste.  This will give the toast a rich garlic flavor. 

NOTE:  You can prepare the toast without the garlic.

Lightly brush some extra virgin olive oil on top of each bread slice.

Spread the avocado mixture on top of the garlic toast.

You can see the avocado chunks in the mixture. 

Garnish with the fresh seasoned tomatoes.  This is optional.

Ingredients

  • 1 Ripe Hass Avocado
  • 2 to 3 teaspoons Nonfat Greek Yogurt
  • 1 Lemon Wedge
  • Pinch of Sea Salt for Avocado spread
  • 3 Slices of Bread, Toasted
  • 1 garlic clove, peeled
  • 2 to 3 small tomatoes, sliced
  • A Pinch Black Pepper for Tomatoes
  • A Pinch Sea Salt for Tomatoes

Extra Virgin Olive Oil to brush on toast and drizzle on tomatoes


Instructions

  1.  Cut avocado in half and remove the pit.  Scoop out the flesh and place in a bowl.
  2.  Mash avocado until mostly smooth with a slightly chunky texture.   Add the yogurt, lemon juice and sea salt.  Stir all ingredients until well blended.  Cover with lid and set aside.
  3.   Toast bread.  Cut a garlic clove in half.  Rub the cut side of garlic across the top surface.  Lightly brush each bread slice with olive oil.
  4.   Spread the avocado mixture on each toast.
  5.   Drizzle olive oil on top of sliced tomatoes and sprinkle with sea salt and black pepper.   Garnish each avocado toast with the seasoned tomatoes.

Notes

You can use Whole or Wheat Bread or the bread of your choice.
