Special Blend of SeasoningsThe seasoning envelope with coriander and annatto consists of a special blend of seasonings (ground herbs and spices).  Annatto and coriander are the two main ingredients.  The annatto is used to add color while the coriander is used to add flavor to our tropical dishes.  The seasoning envelopes, however, can be purchased today at most supermarkets under different brand names.

Furthermore, the Taíno Indians cultivated the annatto and coriander (long leaf).   The annatto seeds were also used by the Indians as body paint.  The Spanish term for coriander is culantro (also referred to as Recao).  Culantro and cilantro are cousins with similar flavors while shaped differently.  However, the coriander (culantro) has a stronger flavor and aromatic scent.

If you are unable to purchase the seasoning envelopes at your nearby supermarket, then you can create your own special blend of seasonings with the ingredients listed below!

Creating Your Own Special Blend of Seasonings!

Mix the following ingredients into a bowl:

  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (low sodium)
  • ⅛ teaspoon ground cumin
  • 4 teaspoons paprika or 4 teaspoons ground annatto seeds

You can also change the quantity to suit your taste.  When a recipe calls for one (1) seasoning envelope, add 1½ teaspoons of the mixed ingredients to your dish.
