Baked Breaded Green Tomatoes

Baked Breaded Green Tomatoes – A very popular Southern dish that is traditionally fried.  However, I love to bake them – a much healthier version.   In the South, the breading usually consists of cornmeal and flour.   I prefer to use white flour mixed with salt, black pepper and light brown sugar.  The brown sugar will offset the tartness of the green tomatoes.

When baked, the tender and slightly firm tomato inside is evenly coated with a golden brown crispy crust.  You can’t tell that they are baked, and the best part is that they are not greasy at all.  The Baked Breaded Green Tomatoes are served as an appertizer or side dish.

Food History!

It is believed that this dish originated in the Midwest and Northeast possibly by the Jewish immigrants.  If the tomatoes were not able to ripen due to the frost, they were breaded and fried to prevent from wasting them.   The breading for this region also consisted mainly of flour while the Southern region preferred the cornmeal breading.

When the movie “Fried Green Tomatoes”  came out in 1991,  this dish’s popularity grew in the South, and therefore, became associated to that region.  

Preparing the Breading for the Green Tomato Slices!

Add ⅓ cup of all-purpose flour, ⅓ cup of light brown sugar, 1 teaspoon lite salt or to taste, and ½ teaspoon black pepper.  Mix until well blended, using a whisk or spoon.  The brown sugar is to provide a sweet flavor to the unripe tomato due to their tartness.

NOTE:  If you do not have lite salt, then use ½ teaspoon of regular salt. 

Beat 3 whole eggs with 3 tablespoons of water until the yolks and whites are combined.

Place 1 cup of Italian Style Bread Crumbs into the last shallow pan, which contains other spices and herbs to add more flavor to the green tomato slices.   You can use plain breadcrumbs if you prefer.  Set aside all 3 shallow pans.

There is nothing like picking fresh green tomatoes from your garden!

Slicing the Green Tomatoes!

This is a beautiful fresh green tomato that has been rinsed.  Depending on the size of the tomato, the amount used for this recipe can vary.

With a sharp knife, cut off one end of the tomato.

Cut off the top of the green tomato as well.

Slice the tomato into ¼-inch thickness. 

Each tomato should yield at least 4 to 5 slices. 

NOTE:  For this recipe, I used 3 green tomatoes.

Breading the Green Tomato Slices!

Lightly spray the bottom of 2 baking pans, 13 x 9 x 2 inches, with olive oil and set aside.

Arrange the 3 shallow pans, starting with the flour mixture, beaten eggs, and bread crumbs.

NOTE:  You can also add more of the flour mixture, beaten eggs or bread crumbs to the shallow pans when breading the tomato slices.

First, dredge completely one slice of green tomato with the flour mixture.

Secondly, dip into the beaten eggs, covering both sides.

Lastly, cover the green tomato totally with the bread crumbs, using a spoon or fork.

Arrange the slices of green tomato in the two baking pans.  Lightly spray on top of each tomato slice with olive oil.

Bake at 350°F uncovered for 30 minutes or until golden brown on one side.

After 30 minutes of baking, turn them over to the other side and bake for another 10 to 15 minutes or until golden brown.

NOTE:  The Baked Breaded Green Tomatoes are turned over in the first baking pan.

I cut one of the tomato slices in half so that you can see the tender and slightly firm tomato inside with an outer golden crust.

These healthy and delicious Baked Breaded Green Tomatoes are served as an appetizer or side dish.  The outer crust is crunchy with a tender and slightly firm tomato inside.  Furthermore, the brown sugar offsets the tartness of the green tomatoes.  Plus, they are not greasy at all.   An excellent healthy version of preparing Breaded Green Tomatoes.  Serve warm.

Ingredients

Flour Mixture:

  • ⅓ cup of all-purpose flour
  • ⅓ cup of light brown sugar
  • 1 teaspoon lite salt or to taste
  • ½ teaspoon black pepper

Remaining Ingredients:

  • 3 whole eggs with 3 tablespoons of water
  • 1 cup Italian Style Bread Crumbs
  • 3 to 4 green tomatoes, rinsed
  • 3 shallow pans
  • Olive oil cooking spray
  • 2 baking pans, measuring 13 x 9 x 2 inches

Preheat oven to 350°F

 


Instructions

  1.   Combine all the ingredients for flour mixture in a shallow pan.
  2.   Beat eggs along with water until completely combined in another shallow pan.
  3.   Place bread crumbs in last shallow pan.
  4.   Cut off both ends of green tomato and slice into ¼-inch thickness.
  5.   Dredge tomato on both sides with flour mixture,  dip into beaten eggs, and coat completely with bread crumbs.
  6.   Grease baking pans with olive oil cooking sray.
  7.   Arrange the breaded tomato slices in baking pans and spray on top of each tomato slice with olive oil.
  8.   Bake for 30 minutes or until golden brown on one side.  Turn them over and bake for another 10 to 15 minutes or until golden brown.
  9.   Serve warm

Notes

If you don’t have lite salt, then use half the amount of regular salt.

You can also add more of the flour mixture, beaten eggs or bread crumbs to the shallow pans when breading the tomato slices.
