BBQ Sauce for Pulled Pork

BBQ Sauce for Pulled Pork is a very popular Southern dish.  I learned how to prepare many authentic Southern cuisines since my husband’s parents are were born and raised in Alabama.  Henry spent his summers in Alabama, visiting his grandparents.

Alabama and Puerto Rico have one thing in common – we love our pork meat.   However, they normally barbecue the pork shoulder after it is cooked and shredded.  We tend to cook the well seasoned pork shoulder in the oven and serve it in chunks.

In the South, the cooked pulled pork is usually placed in a bowl and tossed with some barbeque sauce before serving on a bun.  I prefer to stew the cooked shredded pork meat with the homemade barbecue sauce (guisar la carne) to infuse the flavor into the pork meat.   A very popular cooking method in the Puerto Rican culture.

You can purchase the barbecue sauce already prepared, but I prefer to make my own homemade barbecue sauce.   This homemade barbecue sauce is creamy, bursting with sweet and tangy flavors.   An excellent sauce for different cuts of meat and seafood.

Making Homemade Barbecue Sauce for Pulled Pork!

In a 4-quart saucepan, add the following ingredients:  ¼ cup Worcestershire sauce, 1½ cups tomato ketchup, 4 ounces apple cider vinegar, ½ cup brown sugar, ¼ cup molasses, ¼ cup honey, and ½ cup water.  Using a whisk, stir to combine all the ingredients.

NOTE:  The induction cooker is not turned on while preparing the barbecue sauce to eliminate any lumps from forming.

We are ready to add the spices:  2 teaspoons garlic powder, 2 teaspoons ground mustard, 1 teaspoon onion powder, 1 teaspoon paprika, ½ teaspoon black pepper, ½ teaspoon lite salt or ¼ teaspoon of regular salt, and ¼ teaspoon ground red pepper to give this sauce some heat.  Mix all the ingredients until well blended.

We can now set the induction cooker to medium heat and cook uncovered for 15 minutes.

After 15 minutes of cooking, reduce heat and simmer uncovered for 1 hour, stirring occasionally.

The barbecue sauce has the right consistency – it is very thick and creamy.   You can smell all the spices and condiments.  The homemade barbecue sauce is ready and should yield approximately 2½ cups.

The pork meat is cooked and shredded in advance, using our traditional method of seasoning the pork meat.

Start with adding 4 cups of pulled pork into the barbecue sauce.   You can always add more meat later if necessary.

Stir until the pork meat is completely coated with the sauce.   Now we can cover the saucepan with lid and simmer for 30 minutes.  This will allow the pork meat to absorb the flavors of the barbeque sauce.

NOTE:  I prefer to stew the cooked shredded pork meat with the homemade barbecue sauce (guisar la carne) to infuse the flavor into the pork meat.   This is a very popular cooking method in our culture.

After 30 minutes of simmering, the pork meat has absorbed the liquid, creating a sweet-tart flavor to the tender and juicy pulled pork.

You can butter and grill the buns.  This is optional.  I love to pile the BBQ Pulled Pork on top of a fluffy or soft bun.  This looks so delicious.

Today, the Barbecue Pulled Pork Sandwiches are usually served with coleslaw and dill pickles on top.   My husband, Henry, prefers the traditional method of serving the coleslaw and dill pickles on the side.  It can also be accompanied with macaroni or potato salad.

Instructions

  1.   Combined all the ingredients (except the spices) into a 4-quart saucepan.
  2.   Add the spices, and stir until all the ingredients are well blended.
  3.   Cook uncovered over medium heat for 15 minutes.
  4.   Reduce heat and simmer uncovered for 1 hour, stirring occasionally.
  5.   If you want to make BBQ Pork Sandwiches, then place 4 cups of cooked pulled pork into the barbecue sauce.  Coat the pork meat completely with the sauce.   Cover saucepan with lid and simmer for 30 minutes, stirring occasionally.
  6.   Serve warm on a bun accompanied with coleslaw and dill pickles.  It can also be served with potato salad or macaroni salad.

Notes

The induction cooker is turned off while mixing all the ingredients for the barbecue sauce.

The barbecue sauce should yield approximately 2½ cups.  The total time and nutritional value is only calculated for the barbecue sauce.
