Chinese Rice (Arroz Chino) is an excellent meal to prepare with freshly cooked rice or leftover cooked rice. The rice is stir fried along with vegetables, ham and shrimp. You have your protein, vegetables and carbs all in one dish.
When I moved to Puerto Rico in the 1970’s, my cousin would often prepare this meal with bacon instead of ham. She would also fry the rice with bacon grease. It was delicious. However, I decided to create my own healthier version of Chinese Rice (Arroz Chino).
Food History: The Chinese immigration started in the Caribbean during the 19th Century. For this reason, we have a small Chinese population in Puerto Rico.
Preparing the Scrambled Eggs!
Beat two whole eggs, using a whisk and set aside. Coat the bottom of a 10-inch skillet with 1 tablespoon of sesame oil or vegetable oil over medium heat. Pour the beaten eggs. Allow the eggs to cook for a few seconds.
Gently fold the egg mixture with a rubber spatula and stir until the eggs are scrambled.
When scrambled, remove from skillet and place in a small bowel.
Slicing the Green Onions (Scallions)!
These are 2 green onions (also known as scallions) that have been rinsed in cold water.
Cut off the stringy root ends and then slice the green onions crosswise with a sharp knife.
Listing the Ingredients for Chinese Rice!
These are some of the ingredients: 2 tablespoon sesame oil (you can use vegetable oil), ¼ cup chopped onions, 1 minced garlic clove, ¼ cup shredded carrots or chopped carrots (I purchased the carrots already shredded at the grocery store), 2 green onions, sliced, and ¼ cup of soy sauce.
Continuing with the remaining ingredients: 2 scrambled eggs, 2.5 ounces of lean diced ham, 1 cup small cooked shrimp (The shrimp were purchased already cooked, peeled, deveined and tail off)), 2 cups of leftover long-grain white rice (I will post a link on how to prepare the white rice), ½ cup green peas, 2 ounces of shredded cabbage (Some individuals prefer lettuce, but I love the crunchy texture the cabbage provides to this dish).
Stir Frying Some of the Ingredients for the Chinese Rice!
Pour 1 tablespoon of sesame oil into skillet over medium high heat. Add the onions along with the shredded carrots and lean ham. Mix well and stir fry until the onions become translucent.
We can now add the minced garlic along with the white rice.
This is 2 cups of leftover cooked long-grain white rice that I prepared for another meal. However, you can definitely use freshly made white rice for the recipe.
Mix all the ingredients until well blended and stir fry for a few minutes.
Adding more Protein and Soy Sauce to the Chinese Rice!
After 2 minutes of stir frying, add the cooked shrimp and scrambled eggs into skillet and incorporate into the rice mixture.
Once all the ingredients are well combined, pour half of the soy sauce around the edges. Stir the rice, making sure it is completely covered with the soy sauce.
If you noticed that the rice is not completely coated with the soy sauce after stirring, then pour the other half around the edges and mix well.
Incorporating the Remaining Vegetables!
Add the shredded cabbage, green peas and chopped green onions. Pour some more sesame oil about 1 tablespoon on top. Mix all the ingredients until well blended and continue stir frying for about 5 minutes.
The Chinese Rice (Arroz Chino) is Ready!

The Chinese Rice (Arroz Chino) can be served as a full course meal or as a side dish with your favorite meat or fish. I love to garnish this dish with green onions.

- 2 whole large eggs, beaten and scrambled
- 1 cup small cooked shrimp, peeled, deveined and tail off
- ¼ cup of soy sauce
- 2 ounces of shredded cabbage
- ½ cup green peas
- 2 green onions, sliced
Instructions
- Pour 1 tablespoon of sesame oil into skillet over medium high heat. Add the onions along with the shredded carrots and lean ham. Stir fry until the onions become translucent.
- Add the minced garlic and the cooked white rice. Mix all the ingredients until well blended and stir fry for 2 to 3 minutes.
- Toss the cooked shrimp and scrambled eggs into skillet and incorporate into the rice mixture.
- Once all the ingredients are well combined, pour half of the soy sauce around the edges. Stir the rice, making sure it is completely covered with the soy sauce. If necessary, pour more soy sauce.
- Top rice with shredded cabbage, green peas and sliced green onions along with 1 tablepoon of sesame oil. Mix all the ingredients until well blended and continue stir frying for about 5 minutes.
- The Chinese Fried Rice (Arroz Chino) can be served as a full course meal or as a side dish with your favorite meat or fish. Garnish with green onions.
Notes
NOTE: If you feel that the rice still needs more soy sauce, then pour the other half around the edges and mix well.
