Malta Punch (Ponche de Malta) is a traditional Puerto Rican beverage prepared with egg yolks, sugar and malta. As a child, I was not a big eater like my brothers. I was so thin that my parents were convinced I was anemic. It was either a tablespoon of Geritol or Ponche de Malta. A drink that they believed gave your immune system a boost of iron and strength.
Describing the Malta Beverage!
The Malta is a non-alcoholic malt beverage made with cane sugar and brewed from the finest barley and hops. It is very sweet with a dark caramel color that has the same appearance as beer. In my opinion, it looks and tastes like molasses. Furthermore, we normally drink the Malta chilled and with our meals – similar to drinking a coke or pepsi In the United States. However, when the Malta is prepared with the egg-yolk mixture (known as Malta Punch), it is usually served for medicinal purposes like increasing your iron and energy level.
For this recipe, I will be using a 7-ounce bottle of Malta. This is the Malta India brand but you purchase the brand of your preference.
Preparing the Egg-Yolk Mixture for the Malta Punch!
The first step is to separate the egg white from the yolk, using an egg separator. For this recipe, I will be using one egg yolk. However, some individuals prepare this drink with two egg yolks.
Place the egg yolk into a glass.
Add at least 2 tablespoons of sugar or to taste.
With a fork, stir rapidly until a creamy consistency is formed. The egg yolk contains protein, vitamins and minerals.
As you continue stirring for approximately 1 to 2 minutes, the egg-yolk mixture will have a pale yellow color.
When a creamy and smooth consistency is formed, the egg-yolk mixture is ready.
Note: Bacteria (Salmonella) in raw eggs can be present when not cooked and handled appropriately. As a result, it can cause food poisoning. I always use and consume the egg immediately after it is removed from the refrigerator to avoid bacteria from forming. Store eggs in refrigerator below 40″F. Conversely, you can also use pasteurized eggs instead for this recipe. Please follow the USDA guidelines for handling, storing and cooking with raw eggs.
Pouring and Mixing the Malta Beverage!
We can now pour small amounts of the Malta. The Malta should be chilled.
With a spoon, stir until well blended. When you add the Malta, the drink begins to foam due to the egg-yolk mixture.
Continue pouring the malta and stirring until the egg-mixture and malta are well blended.
The Malta Punch (Ponche de Malta) now has a creamy and smooth silky texture on top.

Ingredients
- 1 egg yolk
- 2 tablespoons sugar
- 1 bottle of chilled Malta (7 ounces)
Instructions
- In a glass, add egg yolk and 2 tablespoon of sugar.
- Stir rapidly with a fork until a creamy consistency is formed with a pale yellow color.
- Pour a small amount of the Malta into egg-yolk mixture. With a spoon, stir until well blended.
- Continue adding and stirring small amounts of Malta into glass until the egg mixture and Malta are well blended. A creamy and smooth silky texture should form on top.
- Before drinking the Malta Punch, stir to combine the foam and Malta. Enjoy!
Notes
As you pour the Malta into glass, the Malta will begin to foam due to the egg-yolk mixture.
